Given the choice I'd  go for 3/4" ply with drywall over it.
Strength of plywood and fireproofing and generally better look with drywall.

I have a oversized 3 car garage with 3 cars in it so most of my big machines are all on roll around. For the walls we used fiberboard and the FRP panels.  They are just about indestructible and if they get dirty we just hit them with some Simple green and it is clean as new. You can beat the stuff with a hammer and you can’t see where you hit it.  We used a light ivory color and the stiple finish really made it come out nice. It gets a lot of compliments and is really durable.
