Suggestions for finishing the shop please

I have a 17 X 65 building on the farm that I use for the shop. It is finished in board and batten pine with tin roof outside and a tin ceiling with R40 insulation inside.
Time to do the inside walls to finish the shop off.
I will be getting 1" X 12" pine in 10 - 12' lengths from the neighbours saw mill.
A few questions on approach for the experts if I might.
I have the festool saws and tracks to get straight edges and square ends and a router to do any edge effect if something is recommended.
Any recommendations on installing the boards perpendicular vs horizontal would be appreciated and if any edge effect on the sides like a bevel is suggested.
I will be getting the pine boards fresh cut from the mill and will stack in the barn for a period to dry it. Any guidance on how much drying time would be needed or the target moisture reading in the wood before I cut and install?
The thickness cuts of the pine from the mill is pretty uniform. I was thinking of installing it on the walls once dried and then using my fleet of sanders (including a planex) to get to a smooth surface.
The pine will probably then be left to age naturally.
